Bircher Muesli

SERVES 4
200g rolled oats
150-200ml freshly squeezed orange juice
3 crisp apples, cored and cut into 1cm cubes
1 fresh orange, peeled and cut into 1cm cubes
250g pack of unsalted mixed dried fruits and nuts
75g pumpkin seeds
4 tbsp flower-scented honey 500g thick, strained Greek yogurt

Put the oats in a large bowl, pour over the orange juice, and stir. Mix in the apple, orange, fruit and nut mix, pumpkin seeds and half the honey. Chill overnight. At serving time, mix in half the yogurt then spoon the muesli into serving dishes. Top with a dollop of the remaining yogurt and a trickle of the remaining honey.
