I’ve been on a mission lately to fix one of my biggest pet peeves: bright glare. I love a cozy, layered lighting scheme, but harsh bulbs instantly kill the mood for me.

So when I came across an Instagram video with an inexpensive solution found on Amazon – simple light diffuser discs – promising instant, softer light without me having to switch up my bulbs or fixtures, I was suitably intrigued. If you’re looking for a small non-stick fry pan for sizzling eggs, omelets, or even a solo pancake (just me?), this is hands-down the best 100% ceramic-coated pan I’ve tried. Trust me, ignore the prettier pastel-toned brands – the Made In non-stick fry pan has a stainless steel base, which is far sturdier, robust, and easier to control.

A quick answer to a question I get asked a lot: how many pans do you actually need? As a cookware tester and chef, I own around 30 pans, but I end up using just three or four on a weekly basis in my kitchen at home. Make a list that reflects your own needs, and don't get carried away in the sales when prices are low and tempting.

• A small ceramic non-stick pan for breakfast eggs or fish dishes. Look for reliably strong PFAS-free options (like the Made In CeramiClad Pan). It is worth investing in one that lasts at least a few years of use.
• A larger stainless steel skillet or the best cast iron skillet for sautéing, searing meats, and building sauces. Look for spacious 10-inch pans or steel sauté pans with lids for more versatility.

I have a love-hate relationship with Meghan Markle's cooking show. As a trained cook, I wince at her basic recipes.
