Welcome guests with this simple sloe gin cocktail; to be honest, any concoction with sparkling wine feels special. This recipe adds sloe gin and fresh pomegranates to Prosecco for a very seasonal tipple that's the perfect start to your Christmas day menu.

Sloe Gin Pomegranate Sparklers

Ingredients (makes 16 or 2 rounds for 8)

  • 1 cup (250ml) sloe gin, chilled
  • 1 cup (250ml) pomegranate juice, chilled
  • 3 tbsp pomegranate arils/seeds
  • 1 x 25oz (750 ml) bottle Prosecco or Champagne, chilled

Method

  • Put a dash of sloe gin, a dash of pomegranate juice, and a few pomegranate arils into each of eight Champagne glasses (like these Nattie Champagne glasses from Crate & Barrel)
  • Slowly top up with Prosecco or Champagne.
  • Repeat for a second round.
